Cheese Stuffed Turkey meatballs in Bolognese

Ingredients:

For the Meatballs

  • 1 lb Ground Turkey ($3.29)
  • 3  Mozzarella String Cheese ($0.80)
  • 1 Egg ($0.20)
  • 1/4 cup Almond Flour ($0.44)
  • 1 Tbsp Italian Seasoning ($0.05)
  • 1 Tbsp Dried Basil ($0.05)
  • 1 tsp Salt  ($0.01)
  • 1 tsp Pepper  ($0.01)
  • 1 Tbsp olive oil ($0.16)

For the Bolognese

  • 3 Carrots ($0.68)
  • 3 Stalks of Celery ($0.40)
  • 1 small yellow onion, diced ($0.75)
  • 1 - 28oz can of crushed tomatoes ($1.58)
  • 1 Tbsp olive oil ($0.16)
  • 8 Fresh Basil Leaves ($0.15)
  • 1/4 cup Fresh Parsley ($0.10)

For the Zucchini

  • 1 Zucchini ($1.49)
  • 1 Yellow Squash ($1.49)
  • 1 Tbsp olive oil ($0.16)

 

Preparation: 

For the Meatballs

  1. Preheat your oven to 400°F.
  2. In a large bowl, mix the turkey, egg, almond flour, Italian seasoning, dried basil, and salt and pepper. 
  3. Cut the string cheese into 1/2" pieces. 
  4. Form the meatballs by taking one piece of cheese and wrapping the meat around it.  Make 1"-1.5" meatballs. 
  5. Heat a skillet over medium high heat and add 1 Tbsp of olive oil.  
  6. Brown the meatballs in the skillet and then place on a sheet pan and bake for 10 minutes or until cooked through. 

For the Bolognese

  1. In a large skillet heat 1 Tbsp olive oil over medium high heat and sauté the onion for about a minute.  Then add the celery and carrot and cook until soft
  2. Chop the parsley and basil while the vegetables cook.
  3. Add the tomatoes, basil, and parsley and reduce the heat to medium low.  Cook for 15-20 minutes or until thickened.  Add salt and pepper to taste.

For the Zucchini

  1. Wash and cut the squash into thin slices.  
  2. Heat a skillet or grill pan over medium high heat and add 1 Tbsp of olive oil. 
  3. Cook the squash for 3-4 minutes. 
  • Divide your ingredients evenly between your 4 containers.
