Satay Chicken Meal Prep

 

 

 

Satay Chicken and Vegetables

Prep Time: 40 Minutes (30 min inactive)        Cook Time: 30 Minutes

Ingredients:

For the Chicken

  • 1.5 lbs Chicken Breast

  • 2 Tbsp Olive Oil
  • 1 Tbsp + 1 tsp Turmeric
  • 1 Tbsp honey
  • 1.5 Tsp Coriander
  • 2 Tbsp soy sauce
  • 1 Tbsp garlic
  • 1 Tbsp ginger
  • 2 Tbsp fish sauce

For the Peanut Sauce

  • 1/4 cup natural peanut butter 
  • 2 tsp honey
  • 1 tsp minced garlic
  • 2 tsp minced ginger
  • 1/2 lime, juiced
  • 2 Tbsp soy sauce
  • 1/4 cup water + extra to taste

For the Vegetables

  • 1 zucchini 
  • 1 yellow squash
  • 2 medium sweet potatoes
  • 1 small sweet onion
  • 2 Tbsp olive oil
  • Salt and Pepper to taste

Preparation: 

For the Chicken

  1. Cut your chicken into strips of about 1/4-1/2 inch thick.  It will help to partially freeze the chicken before cutting.
  2. In a blender, mix all of the seasonings for the chicken.  Blend until smooth.
  3. In a ziploc bag, add the chicken and the marinade. Remove as much air as possible and marinate for at least 10 minutes. Longer is better.
  4. Heat a skillet over medium heat and add a small amount of olive oil.  Cook the chicken for about 3 minutes each side or until cooked through. 

For the Vegetables

  1. Wash and peel your sweet potato.  Start a pot of water over high heat. 
  2. Cut the sweet potato on a bias and slice into pieces around 1/4 inch thick. 
  3. Parboil the potatoes for 4-5 minutes until they are almost cooked through.  You need to soften the potatoes before grilling.  
  4. Heat a grill pan over high heat and put a small amount of olive oil in the pan.  Grill the sweet potatoes for a few minutes on each side to put some grill marks on them.  Season with salt to taste.
  5. While the potatoes are cooking, slice the onion and squash into slices.  Cook on the grill pan to add grill marks and season with salt and pepper to taste.

For the Peanut Sauce

  1. Add all ingredients to a blender and blend until smooth.  Add 1/4 cup of water to start and slowly add 1 tsp at a time until you get to your desired consistency. 

Divide your ingredients evenly 4 ways and add to each of your containers.
