Pulled Pork Meal Prep

 

 

 

Pulled Pork with Green Beans and Banana Pudding

Ingredients:

For the Pork

  • 4-5 lb Pork Butt roast (you will have extra)
  • 1 Tbsp Garlic Powder
  • 1 Tbsp Onion Powder
  • 1 Tbsp Chili Powder
  • 1 Tbsp Paprika
  • 1 Tbsp Salt
  • 1 Tbsp Pepper
  • 1 tsp Cayenne Pepper
  • 1 cup Apple Cider Vinegar
  • 8 Tbsp BBQ sauce (look for low sugar option)
  • 4 pickle spears

For the Green Beans

  • 1 lb fresh green beans

For the Banana Pudding

 

Preparation: 

For the Pork

  1. Mix together all of the spices and rub over the pork. 
  2. Place in a crockpot on high with 1 cup of apple cider vinegar for 4-5 hours.
  3. Once cooked, remove from crockpot and shred with two forks. 
  4. Turn on your oven to broil.
  5. Line a baking sheet with tin foil.  Spread the pork over the baking sheet and place in the oven for 3 minutes.  Remove and flip.  Cook an additional 3 minutes.  Watch carefully so the pork does't burn.  Placing the pork in the oven will add color and texture to the meat.  

For the Green Beans

  1. Boil green beans in a pot of water until soft.
  2. Season with salt and pepper. 

For the Banana Pudding

  1. Divide the pudding mix in half and make according to the instructions on the box. 
  2. Heat the banana in the microwave for a minute.  Mash with a fork until it forms a mush.  Allow to cool.  
  3. Break 15 of the bunny cookies into 2 or 3 pieces.  Mix into the pudding.  Add the banana and stir until incorporated.  
  4. You will want to store this in a separate container because it shouldn't be heated in the microwave.
  5. Add a layer of pudding to the container, then a small bit of Reddi Whip, top with more pudding and Reddi Whip

In each container add about 6 oz of pork (1 cup), 1 pickle spear, 1/4 of the green beans, and 1 container of banana pudding.  Top the pork with 2 Tbsp of BBQ sauce.
