Protein Strawberry Shortcake

  • 1/4 cup coconut flour 

  • 1 scoop casein protein (preferably not chocolate) 

  • 1 egg

  • 1/4 cup milk

  • 2 Tbsp coconut oil

  • 2g stevia

  • Pinch of baking soda 

  • Fat free whipped cream (you can use full fat, it’s not too many more calories but the nutrition info is for fat free) 

  • Fresh Strawberries


MAKES 12 Halves

  1. Preheat your oven to 325F

  2. Mix together the protein powder, coconut flour, stevia, and baking soda. 

  3. Melt the coconut oil, beat the egg. Mix the egg, milk, and coconut oil together. 

  4. Stir wet ingredients into the dry ingredients and mix until a dough forms. 

  5. Line a baking sheet with parchment paper and spray with oil. Separate the dough into six drop biscuits. I recommend flattening them a bit because they won’t spread out like a normal drop biscuit. 

  6. Bake for 10 minutes. 

  7. Cut each biscuit in half and top each half with 1 Tbsp of whip cream and chopped strawberries
