Lemon Garlic Chicken Meal Prep

 

 

 

Lemon Garlic Chicken

Prep Time: 10 Minutes           Cook Time: 30 Minutes

Ingredients:

Makes 4 Servings

  • 2 lbs chicken thighs
  • 1 red bell pepper
  • 1 green bell pepper
  • 2 Tbsp of olive oil
  • Salt and pepper to taste

For the Sauce

  • 1 Tbsp olive oil
  • Zest of 1 lemon
  • 2 Tbsp minced ginger
  • 1 Tbsp minced garlic
  • 3 Tbsp honey
  • 2 Tbsp soy sauce
  • 1 Tbsp rice wine vinegar
  • Juice of 1/2 of a lemon
  • 2 tsp cornstarch
  • Salt and pepper to taste

For the Broccoli

  • 2 bunches of broccoli

 

 

Preparation: 

For the Chicken

  1. Cut the thighs into thin slices.  It will be easier if they are slightly frozen so place them in the freezer 30 minutes to an hour before you plan on cutting.  Season with salt and pepper. 
  2. In a skillet, add 1 Tbsp of olive oil and cook the chicken until it is no longer pink in the center or has reached an internal temperature of 165F. Cook in batches if needed to prevent steaming.  
  3. Wash and cut the peppers into a large dice. 
  4. Add 1 Tbsp of olive oil into the pan and cook the peppers for 5-7 minutes.  

For the Sauce

  1. In a saucepan, add 1 Tbsp of olive oil over medium heat.  
  2. Sauté the garlic, ginger, and lemon zest for 2 minutes.  
  3. Add in the soy sauce, rice wine vinegar, honey, and lemon juice.  Stir to incorporate. 
  4. Stir in 2 tsp cornstarch to thicken.  
  5. Pour the sauce over the chicken and pepper mixture and stir.

For the Broccoli

  1. Steam the broccoli.

Divide your broccoli and chicken mixture evenly 4 ways.
