Key Lime Pie Bites




Key Lime PIe Bites

For the Crust

  • 1 cup Cheerio flour (ground Cheerios)

  • 1 Tbsp honey

  • 1 Tbsp coconut oil

For the Filling

  • 4oz fat free cream cheese

  • 1/4 cup plain Greek yogurt 

  • 1 pack sugar free vanilla pudding mix

  • 1 tsp lime zest

  • 2-3 Tbsp lime juice 

  • 1 egg white 

  • 2-3 packets of stevia

  • Fat free whipped cream




  1. Grind Cheerios to make 1 cups worth of flour.

  2. Add in 1 Tbsp coconut oil and 1 Tbsp honey and mix. 

  3. Spray a mini muffin tin with oil and press the crust into the bottom. I had enough to make 24 mini pies. 

  4. Mix together the cream cheese, Greek yogurt, and pudding. Whip the egg white until peaks form and gently fold in. Add lime zest, lime juice and 2-3 stevia packets as well. Taste and adjust as needed.

  5. Fill each well with a spoonful of the filling. 

  6. Bake at 350F for 12 minutes. Allie to cool to room temperature and then remove from tin. Cool even further in the fridge.
