Chocolate Chip Cookie Bread

Ingredients:

  • 1 cup oats

  • 1/2 tsp baking soda

  • 1/4 tsp salt

  • 2/3 cup plain Greek yogurt

  • 1/4 cup dark chocolate chips

  • 1 small egg or 1/2 large egg

  • 1.5 tsp stevia

  • 1 tsp vanilla

 

Preparation: 

  1. Preheat your oven to 375 degrees Fahrenheit.

  2. Blend the oats into a flour using a blender. In a bowl mix together the oat flour, 1/2 tsp baking soda, 1/4 tsp salt, and 1 tsp stevia.

  3. In a separate bowl mix together 2/3 cup Greek yogurt, 1 small egg, 1/2 tsp stevia, and 1 tsp vanilla.

  4. Mix the dry ingredients into the wet ingredients. Stir in the chocolate chips.

  5. Using a cookie scoop, evenly space out the balls onto a sprayed sheet pan. It will make around 11.

  6. Bake for 15-17 minutes.
