Banana Chocolate Chip Muffins

Prep Time: 10 Minutes           Cook Time: 8 Minutes

Calories: 124 each

Ingredients:

Makes around 20 muffins

  • 2 ripe, frozen and thawed bananas (doesn't have to be frozen but they tend to be a bit sweeter)
  • 1 cup all natural peanut butter
  • 2 eggs
  • 2 Tbsp honey
  • 2 tsp vanilla
  • 1/2 tsp baking powder
  • 4 or 5 chocolate chips for each one

Preparation: 

  1. Mix all the ingredients except the chocolate chips in a blender until smooth.
  2. Pour into a mini muffin tin and top with 4 or 5 chocolate chips. Bake in a 400 degree oven for 8 minutes.
