1/2 cup cooked rice
1/2 cup canned black beans
1 Tbsp milk
Salt & pepper
Cilantro and lime wedge optional
Beat two eggs in a bowl with 1 Tbsp of milk until frothy and no egg whites remain.
Microwave for 1 minute, remove from the microwave and stir. Add in the cooked rice and beans and cook for an additional minute.
Top with cilantro and lime juice if you wish.
