5-Minute Rice and Beans

Prep Time: 3 Minutes         Cook Time: 2 Minutes

Ingredients:

  • 1/2 cup cooked rice

  • 1/2 cup canned black beans

  • 2 eggs

  • 1 Tbsp milk

  • Salt & pepper

  • Cilantro and lime wedge optional

 

Preparation: 

  1. Beat two eggs in a bowl with 1 Tbsp of milk until frothy and no egg whites remain.

  2. Microwave for 1 minute, remove from the microwave and stir. Add in the cooked rice and beans and cook for an additional minute.

  3. Top with cilantro and lime juice if you wish.
